A new cultivar of Dianthus plant named ‘STRAWBERRY SORBET’ that is characterized by pronounced compact habit, grey-green foliage, and bright red flowers. In combination these traits set ‘STRAWBERRY SORBET’ apart from all other existing varieties of Dianthus known to the inventor.
