A new cultivar of Cortaderia plant named ‘Day3’ that is characterized by its strong and sturdy plant habit, its conspicuously dense and compact plant shape, its floriferous flowering habit with creamy white inflorescences, and its variegated foliage that is green and axillary striped with grey-green and creamy white, typically with creamy white margins.
